Component cable with Pioneer DV-578a... Recomended HD Cable?

I recently bought a Pioneer DV-578a to use with my roomates Sony KV-34HS420. I hooked up the video to the tv with a component video cable I had lying around that I used on an old TV. The picture looks great, but you can tell that its not quite as detailed as an HDTV should be.

When you go to the screen setup menu with a dvd playing, it will only let you select "interlaced" video, as opposed to the "progessive" or "cinemotion" options which I assume are needed for 1080i and 720p. My best guess is that the signal is only at 480i. I know 720p and 1080i signals can be sent through a component cable, but is it possible that mine just aren't good enough?

I know for sure that the DVD player is set to progessive output and I also know that the "progessive" function on the TV works via my gamecube.

Can anyone recommend some better component cables or help find the source of this problem?
