I just got a HTIB and it has an optical jack on back of the receiver and DVD player. It says to connect them for 5.1 surround (cord not included of course). Does this mean the regular audio (red & white cords) do not supply the 5.1 surround?? What would the optical connection do that the regular one would/wouldn't??

Correct, not 5.1 from analog RCA's. Optical is a digital connection... hence it provides Dolby Digital audio. You analong RCA's will only give Pro Logic/Pro Logic II.
