Coax and Optical audio are the way to go. Coax is better (at least cheaper) for longer runs. Both use the same digital format.

For video, use the best connection available. S-video is not nearly as good as component (3 RCA cables). Some (myself included) prefer the digital video connection (DVI or HDMI) simply because it eliminates unneccesary D-to-A and A-to-D conversions in the signal path.

So if you have an HDTV, a receiver with video upconversion and a DVD with upconversion, which cables should you use to connect the three? I had previously heard that you would want an S-video cable to run from the DVD to the receiver and component cables to run from the receiver to the TV, but it seems that s-video is commonly referred to as a lesser cable than components. Should it be 2 sets of component cables?

Also, if you use a fiber optic cable in connection with the s-video (or any other combination) would that be a reason to go with s-video over component? Does it make a difference if you are hooking speakers up to the receiver?

Bottom line.

Garbage in, garbage out.

The weakest link in any chain is where it will break. Basically, you should have the highest quality cable at the source and follow through with the same cable through to the end.

To answer the question in a different way....
What would your cable TV look like if you had a badly damaged coax cable coming from the wall to the cable box. No matter what quality of cable you use from your box to the TV your picture and sound will be limited by the signal that is brought to the box over your coax from the wall to the box. Does that make more sense?

Common cables from worst to best:

Analog:
Composite ( Yellow, Red, White )
S-Video Cable
Componet Cables ( Red, Green, Blue )

Digital:
Coax
Optical
DVI/HDMI Cable

Use them in that order but use a better cable if you can.

You don't have to break the bank on either Monster, Xios, Verastarr, etc. You can try places LIKE (but not limited to) www.monoprice.com

S-video is inferior to component. If you have component interconnect, use it. As stated above, upconverting will not restore the signal fidelity lost using the S-video cfrom the DVD to receiver.
