A post I read in another thread made me think about this topic again.

I would love to hear recommendations regarding DVDs that have the best surround sound tracks to showcase receivers' surround sound processing.

Here are a few to get started:

Heat
(I read about 'Heat' and have to agree that two of the shootout scenes sound amazing; the bullets really sound as if they're flying all around the room.

The Fast and the Furious (dts track)

The Matrix

The following have all been recommended, but I haven't heard (or seen) these myself:

Star Wars Episode One (pod race)

T2 (UE)

Daredevil

Die another day (car chase scene)

Saving Private Ryan

The Mask Of Zorro

Equilibrium

Highlander

Bad Boys

(Credit to members 'SharpShooter' and 'Hitman' of another forum for posting some of these as their recommendations).

Change Saving Private Ryan to the DTS special edition and add:
Blade 2(DTS-ES 6.1 track makes very good use of surround sound!)

Star Wars Episde 2(battle scene between the droid army and the clone army)

Black Hawk Down(superbit dts)

Finding Nemo(you'll be surprised)

LOTR: The Two Towers Extended special edition in DTS-ES 6.1(battle for Helm's Deep)

LOTR: Return of the King Extended special edition in DTS-ES 6.1(the battle of Pellennor fields...when the oliphants join the battle and you hear their footsteps throughout the next few minutes of the battle scene)!

The Incredibles(again, you'll be surprised)
