its ok since most times you won't get full power to the sub anyway since music is dynamic in nature and most people don't run at 100% full volume anyway just use common sense and listen for the sub bottoming out or distorting. if it does, back off on the volume a bit. keep bass boost knobs or buttons set flat or off respectively. set gain properly.. don't max it out to get more volume. stuff like that

Okay....one more question....should I even pay attention to the Dynamic Power rating (14.4v) or just go w/ the 12.5v specs of the Amp?
12 volts at idle. 13.8 to 14.4 volts above about 500-900RPM in most cars.. so the higher voltage/wattage with an unregulated power supply will matter. usually the difference isn't that big though so it isn't like it'll mean the difference between a lot of power and damaging anything
