Is it okay to push 100-200 watts RMS more than the RMS sub rating? If so, is it all about keeping the gain low?

its ok since most times you won't get full power to the sub anyway since music is dynamic in nature and most people don't run at 100% full volume anyway
just use common sense and listen for the sub bottoming out or distorting.
if it does, back off on the volume a bit.
keep bass boost knobs or buttons set flat or off respectively.
set gain properly.. don't max it out to get more volume.
stuff like that

Okay....one more question....should I even pay attention to the Dynamic Power rating (14.4v) or just go w/ the 12.5v specs of the Amp?

12 volts at idle. 13.8 to 14.4 volts above about 500-900RPM in most cars.. so the higher voltage/wattage with an unregulated power supply will matter.
usually the difference isn't that big though so it isn't like it'll mean the difference between a lot of power and damaging anything
