Is there much difference between 4 volts and 2 volts preoutput voltage?

Yes, there actually is. What headunits are you looking into?

what's the pre-out voltage about? What is recommended. I take it that the higher the better. What are the benefits of higher and drawbacks to lower?

The higher the voltage, the cleaner the sound.
A 2 volt out would not be as clean at 2 volts as a 4 volt pre at 2 volts.

so if my stereo is 5 volts, that's good then right?

the higher the input voltage, the lower the amplifier gain needed to drive the amp to its rated power output. Read up on amplifier gain at www.bcae1.com

a higher kine voltage will result in a cleaner, higher resolution signal for the amplifier to amplify.
It won't make your stereo system any louder, but it will provide a cleaner signal and thus better sound quality once that 4V signal is amplified to say, hundreds of watts of output power at the speakers.

4 volts is a good target for a head unit to have.. any higher and many amplifiers can't handle the input voltage range. any lower and you lose signal resolution
