If I were to run a digital optical cable out of the digital cable box to the receiver and analog RCA cables out of the cable box to the TV would the receiver know which signal to send (i.e. digital signal to receiver, analog to tv)?

the reciever sends both signals at the same time.

Oh, yes. The Cable box always sends digital audio to the optical port and line level analog to the RCA's.
