I was wondering, if I have a coaxial connection established, do I still need to plug in my analogs (white & red RCA)?

No. Digital interconnect is often better for Dolby Digital, DTS and CD audio.
Analogue interconnect might be useful if your DVD has much better DAC chips than Reciever, or if your equipment handles high-resolution audio (SACD/DVD-A).
