Ok I know I want to buy Polk Audio sub(s), I just like Polk Audio all around it may not be the best but it works.
I either want to get 2 Polk Audio MM2104 10"s(300w RMS 600w Peak 4ohms each), or 1 MM2124 12"(400w RMS 800w Peak 4ohms), or 1 MM124 12"(500w RMS 1000w Peak 4ohms)
I was wondering what amp I should get for any of those subs? and also what type of enclosure would get the best sound out of the sub(s)?

I would do the one 12 with 500w. In that case, find an amp that does 500w RMS at 4 ohms like a cheap Kicker KX500.2.

As for a box thats up to you, but I like sealed boxes.

My bad, you'd need the dual 4 ohm coil for that amp.

Ok so if I went with the Polk Audio MM124 12" would any of these amps be good for it? I don't know much about what is a good company for amps and which is not.

U.S. AMPS XT800.2 XTERMINATOR AMP
or
POWER ACOUSTIK OV2-1250 2-CH 1250W
or
SONY XM-1652Z 1000 WATT
or
KENWOOD KAC-X522 AMP

What is everyones opinion on these amps? and will any of them work for that sub?

Stay away from all those, except maybe the US Amps. Their quality seems to be up in the air. I have experience with eD and they're great IMO. A b-stock NINe.1 would be about right.
