Best TV's for LCD are Sony, Samsung and Sharp. If you want Plasma go with Pioneer or Panasonic.
Since the PS3 can manage 1080p resolution with Blu-ray movies, you will want a monitor that has 1920x1080 pixels. (They're pretty expensive and virtually no plasma TV's can manage it.... there is a pioneer that can do it for $7000) You need a LCD TV to get 1080p for any reasonable price. (i'm not sure the word 'reasonable' applies just yet for 1080p tv's) Check out the new Sharp aquous screens as they are the best 1080p monitors for the price.
If the TV is only going to be used for PS3 a sony XBR LCD might not be a bad choice. According to Home Theater mag the sony LCD XBR model has a terible video processor and needs to be feed a 1080P signal from Blue Ray or an outboard processor in order to perform up to its potential. For someone who is going to use it for all viewing and gaming needs there are better choices.
